Banana Split

Creamy banana ice cream drizzled with a sweet caramel-date sauce and topped with fresh berries, cherries, and dried fruits. These banana splits feel decadent without containing any fat—they’re made only with fruit!

The fructose in banana is the liver’s favorite source of food. It provides quick fuel to the liver and wakes up sleepy cells, increasing their ingenuity and work output. Bananas are also one of the most antibacterial, anti-yeast, and antifungal foods.

Banana Split

Ingredients:

Banana ice cream:

  • 3-4 frozen bananas, roughly chopped
  • 2-3 tbsp water or freshly squeezed orange juice (optional)

Strawberry ice cream:

  • 3-4 frozen bananas, roughly chopped
  • 1 cup frozen strawberries
  • ¼-⅓ cup water or freshly squeezed orange juice (optional)

Wild blueberry ice cream:

  • 3-4 frozen bananas, roughly chopped
  • 1 cup frozen wild blueberries
  • ¼-⅓ cup water or freshly squeezed orange juice (optional)

Date sauce:

  • ½ cup pitted Medjool dates
  • 1 cup warm water
  • 1 tsp alcohol-free vanilla extract or ½ tsp pure vanilla bean powder

To serve:

  • 2-4 bananas, peeled and cut in half lengthwise
  • ¼ cup clean strawberry jam without citric acid or preservatives
  • ¼ cup clean wild blueberry jam without citric acid or preservatives
  • ¼ cup chopped or whole dried mulberries (optional)
  • ½ cup pitted fresh or thawed frozen cherries

Directions:

To make the ice creams, place the ingredients for each flavor in a food processor or blender and blend until smooth, scraping down the sides as needed. If you have a powerful blender or food processor, you may not need any water or orange juice. Otherwise, you can add as much of either liquid as needed to blend until smooth. Serve immediately, or freeze for at least 2 hours for a firmer consistency.

To make the date sauce, combine the dates, water, and vanilla in a high-speed blender. Blend until smooth, scraping down the sides as needed.

To serve, arrange the banana halves on two plates and place a scoop of each ice cream between the halves. Drizzle the date sauce, strawberry jam, and wild blueberry jam on top. Top with dried mulberries (if using) and cherries. Serve immediately and enjoy.

Tips:

  • Look for pure fruit jams without added sugar, citric acid, natural flavors, artificial flavors, or other additives.
  • Thawing your frozen bananas for 5 minutes before using can be helpful.
  • As an alternative to using a blender or food processor, you can also make banana ice cream with a fruit ice cream machine or a multipurpose masticating juicer.
