These cherry pie bars offer heavenly flavor that will inspire you to make them again and again! Perfect for kids or adults, these bars are a great choice to make for social gatherings where you want to please everybody with a truly delicious and clean dessert or sweet snack.

Cherries sharpen the mind by purifying the bowels—they’re better at alleviating constipation than prunes! They cleanse the bladder, too, and help alleviate spastic bladders and bladder prolapse.

Cherry Pie Bars

Ingredients:

  • 1 ¾ cups gluten-free oat flour
  • 1 cup gluten-free rolled oats
  • ¾ cup brown rice flour
  • ½ cup pure maple syrup
  • ¾ cup applesauce

Cherry layer:

  • 3 cups fresh or frozen pitted cherries
  • 2 tbsps pure maple syrup
  • 2 tbsps potato or arrowroot starch
  • 2 tbsps freshly squeezed lemon juice
  • 1 tsp vanilla powder

Directions:

Preheat the oven to 350F (180C). Line a 9 x 9-inch baking dish with baking paper.

To make the filling, combine cherries, pure maple syrup, potato starch or arrowroot starch, lemon juice, and vanilla in a large pot. Place the pot on medium-high heat and cook, stirring occasionally until the cherries begin to soften.

Mash gently with the back of a wooden spoon or potato masher. Continue cooking until the mixture is thick and jammy, stirring often. Add a bit of water if it gets too thick. Remove from heat and set aside to cool.

In a large bowl, stir together the oat flour, oats, brown rice flour until well combined. Add the pure maple syrup and applesauce and mix until you get a uniform mixture. It will appear crumbly and should stick together when pressed between fingers.

Place 3/4 of the crumble mixture in the prepared baking dish and, using your hands, pat down until you have an even layer covering the bottom of the dish.

Top with the cherry mixture and spread out evenly. Sprinkle the remaining crumble mixture evenly over the cherry layer.

Bake it for 25 to 35 minutes, until the top is starting to turn golden brown. Remove from the oven and cool completely in the baking dish, then cut into bars.

These bars are best enjoyed when fresh but can be stored in an airtight container at room temperature for a day or two.
