Citrus Salad

This salad is bright, beautiful and cheery. The combination of fresh juicy citrus paired with tender greens and chewy dried cranberries creates a sweet, tart and refreshing salad. Enjoy this salad alone for a light meal or serve it up as a side to guests at your next gathering with family and friends.

Oranges (and their cousins, tangerines and grapefruits) are full of the coenzyme glutathione, which goes into activation because of their high content of flavonoids and limonoids. Together, glutathione, flavonoids, and limonoids fight off viruses, protect the body from radiation damage, and deactivate toxic heavy metals in the system. Oranges and tangerines are also abundant in a form of bioactive calcium you can’t get anywhere else. The body instantly absorbs this calcium, which means that these citrus beauties actually help regrow teeth, not destroy them. Their acid content is not destructive; rather, it works for you by dissolving kidney stones and gallstones.

Watercress has the ability to help in breaking up kidney or bladder stones and is one of the best foods for purifying the blood and aiding in removing mucus from the body. Watercress is especially good for helping to prevent osteoporosis, anemia, cardiovascular diseases, muscular and skeletal problems, eye degeneration, and memory issues.

Citrus Salad 

Ingredients:

  • 1 medium-sized orange
  • 1 medium-sized grapefruit
  • 1 1/2 cups watercress 
  • 3 cups butter lettuce, roughly chopped
  • 1/4 cup dried cranberries (if fat-free, use oil-free cranberries, or substitute cherries)
  • Juice from 1/2 orange, to serve

Directions:

Cut the peels and pith (white layer) off the orange and grapefruit. Slice thinly, then cut bigger pieces into halves. Set aside. Arrange the watercress and butter lettuce on a serving tray. Add the sliced citrus and dried cranberries, then top with orange juice. Serve immediately.
