Fat-Free Brazilian Cheese Rolls

This fat-free version of Brazilian cheese bread is so tasty, fun to eat, and easy to make. Otherwise known as Pão de Queijo, these bread rolls are traditionally made with cheese and eggs, making them both high in fat and fuel for the pathogens that cause countless chronic illnesses, symptoms, and conditions. Instead, you can make this version without eggs, cheese, or dairy of any kind, and they’re also gluten-free and grain-free. Enjoy these Brazilian cheese rolls for a snack or as a side to any meal.

Potatoes create an easy, sustainable form of glucose that helps stabilize adrenals, feeds the nervous system, restores glycogen in the brain, and is antiviral and antibacterial.

Fat-Free Brazilian Cheese Rolls

Ingredients:

  • 1 lb potatoes, peeled and roughly chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 ½ cups tapioca starch, more if needed
  • ½ tsp sea salt
  • 1 tsp pure maple syrup, for brushing

Directions:

Cook the potato in a steamer set over a pot of boiling water for 15 to 20 minutes or until tender. Remove and mash until completely smooth.

Preheat oven to 350°F/180°C. Line a large baking sheet with parchment paper.

In a medium-sized bowl, combine the tapioca starch, garlic powder, onion powder, and sea salt (if using). Whisk until uniform.

Stir/knead the dry ingredients into the steamed potatoes until you get a smooth dough and all the starch is incorporated.

Shape the dough into small balls (about the size of golf balls) and place on the prepared baking sheet. Brush maple syrup lightly on top.

Bake for 25 to 30 minutes or until the bread balls are golden brown on the bottom and cracks start to form on the surface. Enjoy!

Makes 5-7 rolls

Tips:

  • Sea salt is optional but makes a big difference to the flavor!
