Mashed Potato Fries

Mashed Potato Fries

These fries are crispy and so delicious, without using any oil. To make this recipe, you’ll need to prepare the potatoes the day before and keep them in the refrigerator overnight, so it’s a perfect recipe to use up steamed potatoes that you have left over or that you batch prep each week for easier meals. Enjoy these fantastic fries with the barbecue sauce or ketchup or both!

This recipe comes from Brain Saver Protocols, Cleanses & Recipes, the companion book to Medical Medium Brain Saver. These two essential books about our most complex organ—the brain—dive deep into why people all over the world are suffering with mental health and brain-related symptoms and conditions. Brain Saver unveils the why behind more than 100 brain- and nervous system–related symptoms, diseases, and disorders; Brain Saver Protocols, Cleanses & Recipes reveals the truth about how to heal in even more detail (including cleanses, recipes, supplement protocols, and so much more).

Mashed Potato Fries

Ingredients:

  • 4 lbs potatoes, roughly chopped
  • 1 tbsp onion powder
  • 2 tsps garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme or oregano
  • Medical Medium Ketchup
  • Barbecue sauce (optional)

Barbecue Sauce:

  • 6 oz tomato paste
  • 1⁄3 cup apple juice
  • 1⁄4 cup pure maple syrup or raw honey
  • 2 tbsps freshly squeezed lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1⁄2 tsp chipotle powder
  • 1⁄4 tsp chili powder
  • 1⁄2 tsp mustard powder

Directions:

Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 18 minutes until tender. Remove from the heat and cool for 10 minutes; then place them in a large bowl or pot.

Add the onion powder, garlic powder, paprika, and thyme or oregano to the potatoes. Mash with a potato masher until almost smooth; some bigger pieces are okay.

Transfer the mixture to one or two square or rectangular containers, and press the mash down until evenly spread to about 1 inch thick. Cool completely at room temperature, uncovered; then cover and refrigerate overnight.

The next day, preheat the oven to 430°F/220°C. Line a large baking sheet with parchment paper.

Flip the container(s) upside down onto a cutting board. Tap a few times if the mashed potato brick doesn’t come loose right away. Cut into chunky fries and transfer to the prepared baking sheet, leaving a bit of space between the fries. Bake for 40 minutes, flip, and then cook for a further 20 to 30 minutes until the fries are browned and crispy all over.

Make the barbecue sauce by whisking together all the ingredients until smooth. Serve fries immediately with the sauce or ketchup. Enjoy!

Tips:

  • Potatoes are so versatile as an ingredient in healing meals that you may wish to steam enough potatoes at one time to last a few days or a week so they are ready in the fridge to be added to salads or used in potato hash, soups, these fries, or any of the other Medical Medium recipes.
