Pancakes With Berry Syrup

These fat-free pancakes come out beautifully without any need for oil, butter, eggs, or milk, making them a far better choice for anyone on the healing path. They’re also excellent to make for your children or loved ones no matter what their diet! Enjoy them with the sweet berry syrup for a satisfying pancake meal when the mood strikes.

Pancakes With Berry Syrup

Ingredients:

Pancakes:

  • 1 cup gluten-free oat flour
  • 1 tsp aluminum-free baking powder
  • ¼ cup applesauce
  • ½ cup water
  • 2 tbsps pure maple syrup
  • ½ tsp cinnamon (optional)

Berry syrup:

  • 1 cup mixed frozen berries, such as strawberries, raspberries, blackberries, wild blueberries, and/or blueberries
  • 2 tbsps water
  • 2 tbsps pure maple syrup
  • 1 tsp alcohol-free vanilla extract or ½ tsp pure vanilla powder
  • ½ tsp arrowroot powder or potato starch

Directions:

To make the syrup, add the berries, water, maple syrup, vanilla, and arrowroot powder to a small saucepan, mix well, and bring to a simmer. Cook, stirring every few minutes, until the syrup thickens. Set aside.

Combine the oat flour and baking powder in a medium bowl. Mix well. Add the applesauce, water, maple syrup, and cinnamon (if using) to the bowl. Stir until well combined and smooth.

Place a ceramic nonstick frying pan on medium-high heat. Place about ¼ cup of the pancake batter onto the pan. Cook until bubbles form, flip, and cook for another minute. Remove from the heat and repeat with the remaining batter. If the batter gets very thick, then add a teaspoon of water to it.

Serve the pancakes immediately with the berry syrup.
