Baked Turmeric Bananas With Wild Blueberry Sauce

Warm from the oven, these baked bananas offer the healing properties of turmeric and just the right complement in sweet, antioxidant-rich wild blueberry sauce.

Baked Turmeric Bananas With Wild Blueberry Sauce

Ingredients:

Bananas:

  • 3-4 bananas, peeled and cut in half lengthwise
  • ¼ to ½ tsp ground turmeric
  • 1 tbsp raw honey or pure maple syrup

Wild blueberry sauce:

  • 1 ½ cups frozen or fresh wild blueberries
  • 2 tbsps raw honey or pure maple syrup
  • 2 tsps arrowroot powder

Directions:

Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.

Place the banana halves on the baking sheet and sprinkle the turmeric evenly on top. Drizzle with the raw honey or maple syrup.

Bake for 15 to 18 minutes until the bananas are soft and golden brown. Place under the broiler/grill for a further 2 to 3 minutes if the bananas haven’t browned on top, being careful not to burn the bananas.

While the bananas are baking, combine the wild blueberries, raw honey or maple syrup, and arrowroot powder in a small saucepan. Stir until evenly mixed. Place on medium-high heat and cook, stirring frequently, until the wild blueberries are soft and the sauce has thickened.

When the bananas are ready, divide them between two or three plates and top with the warm wild blueberry sauce. Serve immediately.

Tips:

  • Be cautious not to add too much turmeric or the bananas will become bitter.
