Cowboy Caviar

Cowboy Caviar is a delicious chunky dip made with beans, chopped vegetables, herbs, and spices and in this recipe it’s tossed in fresh lime juice and some raw honey. This dip can be enjoyed alone or served scooped onto larger vegetable crudités such as lettuce leaves, bell pepper wedges, and cucumber rounds, or with a clean cracker of choice such as the Medical Medium Cassava Crackers.

Tomatoes contain lycopene, which is a beloved nutrient that the liver admires: the liver uses it to shield itself from cell damage, plus lycopene helps the liver detox red blood cells safely, smoothly, and efficiently.

Avocados are a healthy source of omega-6 fatty acids, they can help restore the central nervous system.

Onions have a disinfecting quality for the liver, keeping it from becoming inflamed. They also improve the temperature control or “thermostat” of the liver so it can heat and cool itself properly.

Cowboy Caviar

Ingredients:

  • 1/4 cup freshly squeezed lime juice
  • 1 1/2 tbsp raw honey
  • 1 1/2 cups cooked black beans (if using canned, rinse and drain)
  • 1 cup chopped cherry or plum tomatoes
  • 1 avocado, diced
  • 1 1/2 cups finely diced red, yellow, and/or orange bell pepper
  • 1/2 cup red onion finely diced
  • 1/3 cup cilantro leaves chopped
  • 1 tbsp finely chopped ripe Jalapeno
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp sea salt (optional)
  • Cassava Crackers, to serve

Directions:

In a medium-sized bowl, add the lime juice and raw honey and whisk until uniform. Add the remaining ingredients to the bowl and stir until evenly mixed.

Serve immediately or refrigerate until needed.
