A festive holiday cookie that is fat-free, gluten-free, dairy-free and a total crowd pleaser. These crunchy sweet tart cookies are the perfect treat with a warm cup of tea or hot apple cider. Share with family or friends or enjoy them with a good book or movie all by yourself.
Cranberry Oatmeal Cookies

Preheat your oven to 350°F/180°C. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the gluten-free rolled oats, oat flour, coconut sugar, baking powder, baking soda, and ground cinnamon or nutmeg. Mix well.
Add the applesauce, pure maple syrup, and finely grated orange zest to the dry ingredients. Mix until all ingredients are well combined and a cookie dough forms.
Gently fold in the organic dried cranberries until evenly distributed throughout the cookie dough.
Using a cookie scoop or a spoon, drop rounded portions of dough onto the prepared baking sheet, leaving some space between each cookie.
Optionally, use the back of a spoon or your fingers to flatten each cookie slightly, as these cookies do not spread much during baking.
Bake in the preheated oven for 10 to 12 minutes or until the edges are golden brown. Keep a close eye on them, as baking times may vary.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
These cookies taste best the day they were baked but can be stored in an airtight container at room temperature for up to 3 days.
