Combine the coconut milk, almond milk, vanilla, maple syrup, and potato starch in a small saucepan. Whisk until uniform.
Place the saucepan on medium-high heat and cook, whisking continuously, until thick and simmering.
Divide the custard between 4 ramekins and lightly tap on the countertop to even out the surface and remove any air bubbles.
Refrigerate for at least 6 hours, best overnight.
Sprinkle maple sugar or coconut sugar on top in a thin even layer and use a blow torch to caramelize.
Serve immediately.
