Black salt brings the flavor of eggs to this tasty dish without having to include eggs as an ingredient. This is a big win for anyone who loves egg fried rice but has a symptom or condition they’re trying to heal! Eggs feed the pathogens behind chronic illness, so they’re best avoided in any form. Enjoy this recipe as a side, main, or snack. You can make it with or without the black salt, and with or without the coconut aminos, depending on your unique needs and preferences. You can also choose to use either brown rice, quinoa, or cauliflower rice.

Potatoes are antiviral, antifungal and antibacterial, with nutritional cofactors and coenzymes plus bioactive compounds to keep you healthy and assist you with stress.

“Egg” Fried Rice

Ingredients:

  • 1 cup finely chopped onion
  • 3 garlic cloves, minced
  • 1 tbsp finely chopped ginger
  • 3/4 cup finely diced carrot
  • 1/2 cup dehydrated potato flakes
  • 1/4 tsp turmeric
  • 1/4 tsp black salt (optional)
  • 1/4 cup water
  • 3 cup cooked brown rice, cooked quinoa or raw cauliflower rice
  • 1/2 cup frozen or fresh green peas
  • 2 tbsp coconut aminos (optional)
  • 1/4 cup chopped spring onion

Directions:

Place a large non-stick ceramic skillet on medium-high heat. Add the onion and cook for 3-5 minutes, until soft and browned. Add a bit of water if needed to prevent sticking.

Add the garlic, ginger, and carrot to the pan. Cook for 2-3 minutes, then add the potato flakes, turmeric, black salt (if using), and water. Cook, stirring frequently, for 3-4 minutes or until the potato flakes look like scrambled eggs. Add the brown rice, quinoa or cauliflower rice; peas; and coconut aminos (if using) to the pan and cook for 3-4 minutes on high heat, stirring frequently, until lightly browned. Stir in the spring onion and remove from heat.

Divide rice between serving bowls and serve immediately.

Serves 3-4
