Fat-Free Apple Pie

Nothing better than apple pie! That is unless it’s a fat-free, gluten-free, dairy-free apple pie which means you can enjoy it whenever you want! The cinnamon apple filling with the maple crumble topping baking in your oven will fill your home with comforting nostalgic aromas that feel like a warm hug. Enjoy with a scoop of vanilla banana ice cream for the ultimate treat.

Fat-Free Apple Pie

Ingredients:

Dough:

  • 2 cups gluten-free oat flour
  • ½ cup tapioca flour
  • ½ cup applesauce
  • 2 tbsp pure maple syrup

Filling:

  • 7 cups sliced, cored and peeled apples
  • ½ cup coconut sugar
  • 2 tbsp potato starch
  • 1 tsp ground cinnamon

Crumble topping:

  • ¾ cup gluten free oat flour
  • ¾ cup brown rice flour
  • ¼-⅓ cup pure maple syrup

Directions:

Preheat oven to 350°F/180°C. In a mixing bowl, combine the gluten-free oat flour and tapioca flour. Stir until evenly mixed. Add applesauce and pure maple syrup, and mix/knead until you get a soft dough that’s not sticky. Add more oat flour or applesauce to achieve this consistency.

Roll the dough out between two sheets of parchment paper, then transfer to a 9-inch pie dish. Using your hands, press the dough evenly into the bottom and sides of the dish. You can use a glass to flatten the bottom. Prick the dough a few times with a fork. Refrigerate until needed.

To make the crumble topping, combine the oat flour and brown rice flour in a small bowl. Whisk until uniform, then pour in the pure maple syrup. Rub the syrup into the dry ingredients until you get a crumbly mixture. Set aside.

To make the filling, combine the apple slices, coconut sugar, potato starch, and cinnamon in a very large bowl. Stir until evenly coated.

Remove the crust from the fridge and layer apple slices tightly in the pie dish. Top with crumble and bake for 30 minutes until the crust is browned, then cover and cook for a further 30 minutes until the apples are cooked through.

Cool for at least 1 hour, then serve.
