Kid's Ice Cream Sundae

This fun sundae is the perfect treat for children—and they’ll never know it is made with healthy ingredients! This sundae is dairy-free and made without refined sugar, preservatives, or artificial or natural flavors, all of which you’d normally find in a sundae. You can make this sundae with or without the coconut whipped cream and you can substitute berries for the sprinkles if you can’t find clean sprinkles or simply don’t have them on hand. Either way, it will taste fantastic.

Bananas soothe the linings of the intestinal tract and also soothe the nerves attached to the intestinal tract.

Raspberries are rich in antioxidants that remove free radicals from the organs and bloodstream.

Kid’s Ice Cream Sundae

Ingredients:

Banana ice cream:

  • 4 frozen bananas
  • 1 tsp vanilla powder or alcohol-free vanilla extract
  • 2-3 tbsp water or unsweetened almond milk

Date syrup (or substitute store-bought):

  • 1/2 cup pitted Medjool dates
  • 1 cup warm water
  • 1/2 tsp vanilla powder or 1 tsp alcohol-free vanilla extract

To serve:

  • 1/4 cup clean raspberry jam without citric acid, added sugar, or preservatives
  • 1/3 cup coconut whipped cream (optional)
  • 2-3 tbsp clean sprinkles (optional)
  • 2 cherries

Directions:

To make the banana ice cream, combine the frozen bananas and vanilla in a food processor. Process the bananas until you have a smooth, soft-serve consistency, adding warm water or almond milk by the tablespoon as needed to prevent sticking. Place in an airtight container in the freezer to set for 3-5 hours.

To make the date sauce, combine the dates, water, and vanilla in a high-speed blender. Blend until smooth, scraping down the sides as needed.

To make the optional whipped cream, chill your mixing bowl in the freezer for 10 minutes. When the bowl is chilled, remove the thick cream from the top of the can, leaving the coconut water behind. Using an electric whisk, beat the cream for 2-3 minutes until you get soft peaks. Add the honey and beat for another 2 minutes.

Scoop the ice cream into serving glasses and top with raspberry jam, date syrup (optional), coconut whipped cream (optional), sprinkles (optional), and cherries. Serve immediately.
