These nori rolls are a fantastic way to get more leafy greens such as lettuce and spinach into your diet. They’re a nice change-up from a salad, and they’re fun to eat. The dipping sauce can be whisked together in just a few minutes if you wish to make it. Either way, enjoy this tasty way of getting some of the most healing foods into your body.

Leafy greens are antiviral, antibacterial, and anti-mold—and great for staving off every toxin, poison, and pathogen in the Unforgiving Six, which you can read about in Life-Changing Foods Expanded, and also supporting us against adrenaline triggers and civilization sabotage. Leafy greens are one side of the equation necessary (in addition to critical clean carbohydrates such as fruits) to keep us alive, and to fend off disease and chronic illness.

Nori Rolls

Ingredients:

  • 4 sheets nori
  • 4 cups lettuce mix
  • 2 cups baby spinach
  • 1 large tomato, cut into strips
  • ¼ medium-sized sweet onion, thinly sliced
  • ½ avocado, thinly sliced
  • ½ cup tightly packed shredded carrots or shredded red cabbage (optional)
  • 4 strips Atlantic dulse, or 2-3 tsps Atlantic dulse flakes
  • ¼ cup fresh orange or lemon juice

Dipping sauce (optional):

  • ½ cup freshly squeezed orange or tangerine juice
  • ½ tbsp raw honey or pure maple syrup
  • 1-2 tbsps freshly squeezed lime juice
  • ½ tsp cayenne
  • 1 tsp finely grated garlic

Directions:

Place a nori sheet shiny side down on a chopping board with the long edge close to you.

Arrange 1 cup of lettuce mix, a handful of spinach, prepared vegetables, and dulse on one end of the sheet. Wipe orange or lemon juice across the other end of the sheet, then roll up tightly. Cut in half and set aside.

Repeat the process until you’ve used up all the filling ingredients.

If making the dipping sauce, whisk all the ingredients together in small bowl. Serve rolls immediately with dipping sauce.
