Pizza Potato Waffle

This fun spin on traditional crust pizza means you get to enjoy the experience of waffles with the flavor of pizza! These waffles are made only out of potatoes, herbs, and spices, making them the perfect vehicle for your favorite healthy pizza toppings when you’re focused on healing. There’s no gluten, fats, or dairy in this recipe. Just top your crispy waffles with this simple and easy to make tomato sauce and delicious veggies and enjoy!

Potatoes are high in glucose that provides substance to the liver, as it’s precisely what the liver relies on to keep strong.

Pizza Potato Waffle

Ingredients:

Waffle:

  • 2 lbs potatoes, peeled and roughly chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp sea salt (optional)

Tomato sauce:

  • ½ cup tomato paste
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp raw honey
  • 3-4 tbsp water

Toppings:

  • ⅓ cup thinly sliced mushrooms
  • ¼ cup chopped red bell pepper
  • ¼ cup finely chopped red onion
  • 2-3 fresh basil leaves and/or 1 tbsp fresh oregano leaves

Directions:

Place the potatoes in steamer or colander set over a pan of boiling water. Cover with a lid and steam for 15 to 20 minutes, until tender when pierced with a fork. Remove and cool completely.

Add the potatoes to a mixing bowl and add the garlic powder, onion powder, dried oregano, and sea salt. Mash with a potato masher until lump-free.

Heat a non-stick waffle machine to high heat. Add the mashed potato until the base of the waffle machine is evenly covered, then close the machine and cook until the waffle is crispy, about 10 to 15 minutes. Repeat with rest of the mixture.

While the waffles are cooking, make the marinara by mixing together the tomato paste, dried oregano, dried thyme, raw honey, and water in a small bowl. Set aside.

Place a medium-sized non-stick ceramic skillet on medium-high heat. Add the mushrooms and cook, stirring often, until browned, about 5-6 minutes. Add a bit of water if needed to prevent sticking.

To serve, spread the marinara over a crispy waffle and add mushrooms, bell pepper, red onion, and herbs on top.
