Potato, Asparagus & Onion Bowl

Potato and veggie bowls are a versatile and delicious meal you can keep coming back to as a healing meal in your weekly rotation. Potatoes provide satiation, nutrients, and critical clean carbohydrates so you get the essential glucose our brains and bodies need to heal and thrive. Then you can choose your favorite vegetables to add into your potato and veggie bowls for additional nutrients and healing properties, along with extra flavor and variety. Also, you can pair with fresh greens or a salad for a truly healing meal.

Potato, Asparagus, & Caramelized Onion Bowl

Ingredients:

  • 1 lb potatoes
  • 2 cups chopped asparagus
  • 1 cup thinly sliced onion
  • 1/4-1/2 cup water, more if needed
  • 1 garlic clove, finely chopped

Optional additions:

Directions:

Steam whole potatoes for 45 minutes or until tender when pierced with a fork. Remove from heat and cool.

Steam asparagus and cook until bright green and tender, 5-8 minutes. Remove and set aside.

Place a non-stick ceramic skillet on medium-high heat and add the onions. Cook until soft and browned, for about 8-10 minutes, adding a tablespoon of water as you go to prevent sticking. When the onions are ready, add the garlic and continue cooking for another 1-2 minutes. Remove from heat and serve with asparagus and potatoes.

Tips:

  • You can batch prep the potatoes the night before and store in the fridge to use when you’re ready. Reheat by simply adding to ceramic skillet with veggies or use an oven or air fryer to crisp up as desired.
