These waffles are cooked until golden and served with a sweet wild blueberry sauce. This recipe, which can be enjoyed any time of the day, is sure to satisfy any sweet craving!

Directions:
Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam for 15 to 20 minutes until tender when pierced with a fork. Remove from the heat and cool completely.
Add the potatoes to a large bowl and mash with a potato masher until lump-free.
Heat a ceramic nonstick waffle machine to high heat. Add enough mashed potatoes onto the base of the waffle machine until it’s evenly covered, then close the machine and cook until the waffle is crispy, 10 to 15 minutes. Repeat with the remaining mashed potatoes.
While the waffles are cooking, combine the wild blueberries, maple syrup, vanilla, and arrowroot powder in a small saucepan. Stir until evenly mixed. Place on medium-high heat and cook, stirring often, until a thick sauce forms.
Serve the waffles immediately with the wild blueberry sauce on top. Enjoy!
