Sesame Cucumber Noodles

Fresh, light, and tasty, these Sesame Cucumber Noodles are a pleasure to eat. The cucumbers provide deep cellular hydration while the dressing and sesame seeds bring wonderful flavor and a hint of nuttiness to this simple recipe.

Sesame Cucumber Noodles

Ingredients:

  • 3 medium cucumbers, spiralized
  • 2 medium carrots, julienned or spiralized
  • ¼ cup loosely packed cilantro leaves, finely chopped

Dressing:

  • 1 tbsp sesame seeds
  • 3 tbsps freshly squeezed lemon or lime juice
  • 2 tbsps raw honey
  • 1 tsp finely grated fresh ginger or ½ tsp ginger powder
  • 1 garlic clove, finely grated
  • ¼ tsp cayenne or red pepper flakes (optional)

Directions:

Add all the dressing ingredients to a large bowl and whisk together until smooth and combined.

Add the cucumbers, carrots, and cilantro to the bowl. Toss until evenly coated.

Divide between two bowls and serve immediately.

Tips:

  • English cucumbers are the best cucumbers for spiralizing into noodles because of their small seeds, but any type of cucumber can be used.
