Spiced Squash Soup

A creamy butternut squash soup made with warming spices, a kick of heat, and finished with fresh herbs and a squeeze of lime juice. This soup is an easy dinner option for cool nights or simply when you want a cozy, comforting, and nourishing bowl of soup. Make extra to feed the whole family or to have plenty left over for lunch or dinner the next day.

Winter squashes, such as butternut squash, are loaded with nutrients that our livers can easily store and high in carotenoids that protect liver cells from damage. The glucose in winter squash can stabilize the liver, allowing blood sugar to stabilize overall in the body.

Spiced Squash Soup

Ingredients:

  • ½ cup diced onion
  • 4 garlic cloves
  • 1 ½ tbsps roughly chopped fresh ginger
  • 1 tbsp roughly chopped long red hot pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ¼-½ tsp cayenne pepper
  • 6 cups peeled and seeded butternut squash
  • 2 cups Healing Broth or water
  • 1 tbsp freshly squeezed lime juice
  • ¼ cup loosely packed parsley or cilantro leaves, to serve

Directions:

Place a ceramic nonstick soup pot on medium-high heat. Add the onion, garlic, fresh ginger, and hot pepper and cook for 3 to 5 minutes, or until the onion is soft. Add a bit of water if needed to prevent sticking.

Add the spices and squash and cook for another 1 to 2 minutes until the spices are fragrant.

Add in the Healing Broth, cover, and simmer for 20 to 30 minutes until the butternut squash is very soft. Add in the lime juice and blend with an immersion blender until smooth. Alternatively, you can do this in a jug blender (in batches if needed).

Divide the soup between two or three bowls and top with parsley or cilantro. Serve immediately.

Tips:

  • When you’re choosing between Healing Broth and water for the ingredients, keep in mind that the broth will produce a richer flavor. Store-bought vegetable stock isn’t called for because it’s very difficult to find a variety that’s free of oil, salt, natural flavors, and/or other additives. For convenience, make a batch of Healing Broth in advance and freeze it (consider pouring into ice cube trays for easy thawing) so you have it on hand for recipes like this.
