This Thai soup is well known and well loved for its wonderful flavor that comes from a broth that is salty, sour, sweet, and spicy, all at the same time. This recipe offers you a truly clean and healthy tom yum recipe you can enjoy.

Ginger is loaded with its own signature variety of bioavailable vitamin C.

Tomatoes contain fruit acids that help keep the gallbladder healthy, helping rid sludge from the gallbladder and even reduce gallstone size.

Mushrooms contain hundreds of undiscovered phytochemical compounds, many of which are detoxifying for the liver.

Tom Yum

Ingredients:

  • 3 cups Healing Broth
  • 2 stalks of lemongrass, halved and lightly bruised
  • 4 kaffir lime leaves
  • 1 inch piece of galangal or ginger, thinly sliced
  • ¼ cup chopped onion
  • ¼ cup chopped carrot
  • ¼ cup chopped tomato
  • ¼ cup thinly sliced mushrooms
  • 2 tsp red curry paste, homemade or clean store-bought
  • 1 tsp chopped red chilies (optional)
  • 1 tbsp coconut sugar
  • ¼ cup coconut aminos (optional)
  • 2-3 tbsp freshly squeezed lime juice
  • ⅓ cup coconut milk
  • 2 tbsp chopped spring onions
  • 2 tbsp chopped cilantro, more to serve
  • Sea salt (optional), to taste

Homemade red curry paste:

  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 8 dried Thai chilis/hot peppers
  • 2 fresh long red chilis/hot peppers
  • 3 kaffir lime leaves (fresh or dried)
  • 3 tbsp chopped shallots
  • 2 tbsp roughly chopped galangal or ginger
  • 5 cloves garlic, roughly chopped
  • 2 stalks of lemongrass, roughly chopped
  • 6 sprigs cilantro
  • 1 tbsp grated lime zest

Directions:

Place the water, lemongrass, kaffir lime leaves, and galangal or ginger in a medium-sized pot on medium heat.

Bring to a simmer, lower the heat and cook for 5-10 minutes, until the broth is fragrant. Remove the lemongrass and ginger from the pot. Add the onion, carrot, tomato, and mushrooms and simmer until the vegetables are tender, about 4-6 minutes.

Add the curry paste, coconut sugar, coconut aminos (if using), lime juice, coconut milk, spring onions, cilantro, and sea salt (if using) to taste. Stir until evenly mixed. Simmer for 3-4 minutes, then take off the heat.

Serve immediately with cilantro on top.

Serves 2-3
