Zucchini Pizza Boats

Ingredients:

  • 4 medium zucchini

Pizza sauce:

  • ½ cup tomato paste
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp raw honey
  • ⅓ cup water
  • Salt & pepper (optional)

Toppings:

  • ¼ cup thinly sliced onion
  • ½ cup cherry tomatoes, halved
  • ¼ cup olives (oil-free and citric acid–free), pitted and sliced in half lengthwise (optional)
  • 4-5 sun-dried tomatoes, roughly chopped
  • ¼ cup diced red bell pepper
  • 4 button mushrooms, thinly sliced*
  • 1 teaspoon red pepper flakes (optional)
  • ¼ cup thinly sliced fresh basil, to serve

Directions:

Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.

Trim the ends off each zucchini; then cut in half lengthwise. Carefully scoop out the flesh from the center of each half to form a cavity. Place each half, cut side up, on the baking sheet. Discard the flesh or set aside to use in other dishes.

Make the pizza sauce by mixing together the tomato paste, oregano, thyme, raw honey, and water. Divide the pizza sauce between the zucchini halves and add different topping combinations to each.

Bake for 20 to 25 minutes until the zucchini is tender but not mushy. Sprinkle zucchini boats with fresh basil and serve.

*For the mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use slimy or decaying mushrooms. That’s a sign of oxidizing and aging.

Tips:

  • For a fat-free recipe, omit the olives. If you do choose to include olives, look for sundried botija olives or another variety that doesn’t contain oil, citric acid, or table salt.
  • Look for a tomato paste that contains only tomatoes and no other ingredients, such as salt or citric acid.
